Vegetarian Thanksgiving side dishes roundup
Thanksgiving is only a week away, and if you're still looking for some tasty, meat-free side dishes, I've got you covered, friends. Below is a collection of some of my favorite side dishes, just in time for the holidays. It just so happens that all are gluten-free, unless otherwise noted!
Vegan
- Roasted green beans and cashews
- Quinoa, kale, and parsley salad with lentils, pomegranate seeds, and walnuts
- Chickpea and artichoke salad (swap tamari or coconut aminos for the soy sauce to make it gluten-free)
- Spinach salad with pears, cranberries, and toasted cashews
Vegetarian
- Wine-braised carrots
- Red-skinned mashed potatoes
- Crispy sesame-crusted Brussels sprouts
- Jean's mushrooms (probably not gluten-free)
- Roasted butternut squash with sage and red grapes
- Spiced pumpkin, lentil, and goat cheese salad
- Glazed carrots with vanilla
- Creamy vegetable gratin (could be made vegan)
- Garlic butter roasted mushrooms
- Low-fat garlic mashed potatoes
- Roasted new potato salad with sage leaves
- Mushroom and broccoli pilaf
